Hellooooo... after quite sometime, Missing In Action here... And in that 'quite sometime' period, I spent most of the time in the kitchen. Baking.... baking and non stop baking. But at the same time, rushing here and there, not to mention running up and down.... But the end result is so sweet... let that be only me to know... *wink*.
After what feels like ages, I managed to settle Mak Chu, my dearest sister's cookies and brownies. Alhamdulillah. She seemed happy with them and hopefully those who received the hampers will feel the same.
Managed to squeeze these two for Jid, in between... glad you like 'em Jid... and nice to see you again after all these while...
Yesterday while I was doing more cookies, I received a text message from my cousin, informing me about my uncle, whom I addressed as Ayah Long, is admitted to Kajang Hospital. Forwarded the message to my brother and told him, if he's bringing mom to visit Ayah Long, I would like to tag along (with hubby's permission that is). I had to reschedule my chores and managed to reach my brother's place, 2 minutes before he reached home from office! Don't ask about the number showing on my dashboard ya. *wink* *wink*
The three of us stayed with Ayah Long for quite sometime. He was sleeping all the time. His condition is not so good, according to the surgeon. We don't really know what had happened as my aunt was not around. The only person available is the grandson and he didn't tell us much. By the way, Ayah Long is 89 years of age. Our duaa, may Allah (Subhanahu wa ta'ala) give Ayah Long what's best for him. Amin.

This is one of our family's favourite recipe. Mom passed it down to me, or rather, I am the one who copied it down from mom's recipe book! Hahaha.... I think, she must have learnt it from the W.I Club she had joined during her younger years. When a recipe is in the oldies category, then rest assure they will only have basic ingredients but nevertheless, the taste stays yummy! At least that's what I think... how about you???
COCONUT COOKIES (Biskut Kelapa)

Ingredients :
5 oz margarine (I used Planta, now and forever...
leh dapat komisen tak promote ni? Hihi)
4 oz caster sugar
1 egg yolk
1/2 teaspoon vanilla essence
2 oz fried grated coconut (for better taste, do not use the readymade desiccated coconut)
1/2 teaspoon baking powder
9 oz flour
Enough melted cooking chocolate to drizzle
(ini mama je pepandai buat.. saja nak kasi mekap sket kat biskut tu)
Method :
1. Place margarine and sugar in a mixing bowl. Stir to mix, not to long.
2. Add in egg yolk and vanilla essence. Mix well.
3. Add in grated coconut. Add baking powder. Mix.
4. Add flour a little at a time till you get a soft dough. You may need less flour than stated in the recipe.
5. Roll the dough to 1 cm thick and cut using a cookie cutter of your choice.
6. Arrange in a tray and bake in a preheated oven at 160 C for 20 to 25 minutes.
7. Once cooled, drizzle with melted cooking chocolate.
